La Michoacana Rose Debuts Spicy-Sweet Mango con Tajin at Minnesota State Fair

The Minnesota State Fair — often called The Great Minnesota Get-Together — is right around the corner, starting on August 21. Among the many food vendors returning this year is La Michoacana Rose, a colorful ice cream shop from Crystal, Minnesota, known for its delicious Mexican-style frozen treats.

This will be the shop’s third year serving fair visitors, and owner Elizabeth Raygoza says she’s ready to make it their best one yet. As always, the stand will be selling their signature paletas — frozen treats on sticks that are similar to popsicles but creamier, fruitier, and often made with fresh, natural ingredients.

This year, La Michoacana Rose will offer four flavors at the fair:

  • Bubble Gum – sweet, playful, and perfect for kids.

  • Oreo – creamy and packed with cookie chunks for chocolate lovers.

  • Pickle Lemonade – tangy and refreshing, with a twist.

  • Mango con Tajin – the newest and most exciting addition.

The Star of the Show: Mango con Tajin

The highlight this year is the Mango con Tajin paleta. It’s inspired by a popular Mexican treat called a mangonada, which combines sweet mango with a tangy, slightly spicy seasoning. Tajin — the seasoning used — is made from dried chili peppers, lime, and salt. The mix creates a bold flavor experience that’s sweet, sour, salty, and a little spicy, all in one bite.

“It’s basically a mangonada on a stick,” Raygoza explained. “Mangonadas are our best-seller here at the shop, so I’m thrilled we can finally bring that flavor to the State Fair.”

She admitted that in previous years, the team hesitated to offer the mangonada flavor at the fair because of the spice. They weren’t sure how fairgoers would react. But after seeing how much customers love it at their Crystal shop, Raygoza decided it was time to take the leap. “I think it’s going to be really popular and people will absolutely love it,” she said.

A Taste of Mexican Tradition

Paletas are a staple in Mexican frozen desserts. They’re often made with fresh fruit, real cream, or natural flavorings — a big difference from mass-produced popsicles. La Michoacana Rose has built its reputation on bringing authentic flavors to Minnesota while still offering fun, creative twists.

At their shop, customers can find everything from creamy coconut and strawberry milk paletas to adventurous flavors like watermelon with chili, cucumber lime, and more. Bringing these to the fair allows visitors from all over the state to experience something new.

For those planning to attend the Minnesota State Fair this year, La Michoacana Rose’s paletas will be sold at the Hamline Church Dining Hall, one of the fair’s well-known food locations. Visitors can stop by, cool off, and enjoy a frozen treat while exploring the fairgrounds.

Raygoza says being part of the fair is a huge opportunity for her business. “It’s exciting to be here for a third year,” she shared. “The fair brings people from all over Minnesota and even other states, so it’s a great way to share our culture and flavors with a bigger audience.”

The Minnesota State Fair is famous for its wide variety of food — from classic cheese curds and corn dogs to more adventurous creations. For Raygoza, the goal is to stand out by offering something refreshing and unique. With the addition of Mango con Tajin, she believes this will be La Michoacana Rose’s best year yet.

So, whether you’re craving a nostalgic sweet like bubble gum, a comforting Oreo cream, or want to try something daring like pickle lemonade or Mango con Tajin, La Michoacana Rose will have you covered.
